Greene County business brings restaurant-grade lamb right to your door

Tucked away in the rolling hills of Waynesburg is Elysian Fields Farm, a 200-acre family heritage farm dating back to the 1800’s.
Its owner Keith Martin left a career in investment banking in 1989 to operate the lamb farm and eventually became co-owner of Pure Bred, the answer to safe, transparent and healthy livestock management.
“As Elysian Fields became more well known, Mr. Martin established relationships with several white tablecloth restaurants,” said Becky Morris, brand ambassador. “For several years, Keith provided lamb to Chef Thomas Keller’s restaurant The French Laundry in Yountville, Calif.”
In 2006, Martin and Keller joined together to found Pure Bred and develop the Safe Alternative Method, a practice to treat animals with respect and produce exceptionally high-quality cuts of lamb.
“All of our sheep are individually identified and we work with all farmers to know every detail of all feed inputs; what’s in their hay and water,” Morris said. “The animals are raised holistically. They aren’t getting any antibiotics or GMO’s. It’s the best lamb with the highest quality and we’re able to provide all of that information to the restaurants and individual consumers.”
To both Martin and Keller, it’s important to know what you’re eating. The most important part of the animal’s life is not what’s on your plate, rather, it’s the animal’s life from the time it’s born to the time it reaches your plate.
“That’s where the dream came from. These animals have a purpose in life and we want to make sure they are raised in a respectful manner,” Morris said. “We’re very thoughtful toward every aspect of their lives.”
For many, lamb is a delicacy ordered when at a high-end restaurant or on vacation in a large city.
However, Pure Bred is changing things for the typical household consumer.
That delicious rack of lamb you had on vacation, can now be made from the comfort of your own home.
“Preparation is important,” Morris said. “Chef Thomas is internationally known and he shares some of his recipes with us online. We often have customers send us videos of what they’ve prepared and it’s so neat to see people embrace it.”
Individuals can purchase everything from a rack of lamb to a single lamb shank if you’re looking for a smaller portion. While lamb in general is a bit pricier than other meats, through Pure Bred, every order is packaged and shipped fresh and the label signifies to customers they are receiving a premium, high-quality product.
