One of my favorite spring/summer sweet treats is lemon squares. Not just any old, boxed recipe for lemon squares, but homemade, fresh squares that are melt-in-your-mouth delicious!

Lemon squares are the perfect treat to bring to a picnic or have at any meal. I found this recipe in “Loukoumi’s Celebrity Cookbook” – a really fun cookbook find that has great recipes from more than 50 celebrities.

Katie Couric adapted the recipe that I’m sharing with you, and it’s a keeper!

Lemon Squares

Ingredients

1/2 cup confectioners sugar

2 cups plus 6 Tbsps. flour, divided

Pinch of salt

1 cup room-temperature butter, sliced into 8 pieces

4 eggs

2 cups sugar

6 Tbsps. lemon juice

Grated rind of one lemon

Directions

Preheat the oven to 350 degrees. Lightly grease a 13×9-inch baking pan.

In a food processor, blend confectioners sugar, 2 cups flour and salt. Add butter and pulse until mixture is crumbly. Press into pan and bake for 20 minutes. Meanwhile, beat eggs, 2 cups sugar, 6 Tbsps. flour and lemon juice until well combined. Stir in lemon rind. Pour on top of hot crust and bake for an additional 25 minutes.

Cool completely, then sprinkle with confectioners sugar. Cut into squares and serve!
