Granola Crunch Apple Pie
• Ingredients
For the crust
2 cups, plus 2 tablespoons flour
1/2 teaspoon salt
1/2 cup (1 stick) cold butter, diced
1/2 cup shortening
1/3 cup milk
2 teaspoons vinegar
For the filling
6 cups thinly sliced tart apples
1 tablespoon lemon juice
1/2 cup sugar
1/4 cup brown sugar
2 1/2 tablespoons flour
1/4 cup cinnamon applesauce
For the topping
1 cup honey-roasted granola
2 tablespoons brown sugar
2 tablespoons cold butter, diced small
1/2 cup salted caramel ice cream topping
To make the crust: Combine flour and salt. Mix in butter and shortening with a pastry cutter or fork, until crumbly. Add milk and vinegar, stir just until combined. Divide dough in half. Reserve one half for later. Roll out the other half, and put into a 9-inch pie pan.
To make the filling: Toss apples with lemon juice. Add the rest of the filling ingredients. Pour into a pie shell.
To make the topping and assemble: Sprinkle granola on top of apples. Sprinkle brown sugar on top of granola. Drop cubes of butter on top.
Roll out the other crust. Cut into strips. Arrange strips on top in a lattice pattern. Beat 1 egg and brush on top of crust. Cover the edges of the crust with foil to prevent from over-browning.
Preheat oven to 375 degrees. Put pie into the lower third of the oven and reduce temperature to 350 degrees. Bake for 60 minutes.
Then remove foil and bake for an additional 10 to 15 minutes. Let cool on rack. Drizzle top with 1/2 cup of salted caramel ice cream topping.
