Inspired by popular waste-not-style dinner events in New York and San Francisco, Phipps Conservatory and Botanical Gardens will host the Waste Not Dinner at 7 p.m. on March 23.

Each plate of the four-course meal takes an ingredient that is often overlooked or discarded — from beet tops and potato skins to olive jar juice and more — and transforms it into an innovative, flavorful dish.

Between each plate, expert chefs from Café Phipps will hold live cooking demonstrations with creative tricks and techniques on food transformations and sustainable practices in the kitchen. The dinner will be served in Phipps’ Special Events Hall, Pittsburgh, with the backdrop of the all-new Tropical Forest Cuba.

The Waste Not Dinner includes admission to Phipps’ Spring Flower Show: Scents of Wonder. Guests are invited to get nose-to-petal with hundreds of aromatic lilies, tulips, daffodils, hyacinths and more spring favorites throughout the glasshouse. To make reservations for the Waste Not Dinner, contact Phipps’ Special Events Team at 412-651-5281. Reservations are required, as seating is limited. Admission is $58 per person and includes dinner and admission to Phipps.
