Summer fun

My friends and I love to get together poolside in the summer and enjoy sharing our new food dishes at the gatherings. I have included three easy and tasty recipes that I will be taking with me to share this summer.

Loaded Baked Potato Salad

Ingredients

3 pounds of baking potatoes

1 sweet onion, chopped fine

1 cup sour cream (I use fat-free)

1 cup light mayonnaise

1/2 pound of cooked bacon, crumbled in large pieces

1 cup shredded cheddar cheese

2 tablespoons chopped, fresh chives

Salt and pepper to taste

Heat oven to 425 degrees. Wash potatoes and poke each one with a knife. Wrap the potatoes individually in foil. Place in oven and bake for 1 hour, or until tender in center. Allow potatoes to cool completely, or bake the day before and keep in refrigerator overnight.

In a large mixing bowl, add chopped onion, sour cream, mayonnaise and mix well. Add salt and pepper to taste. Remove potatoes from foil and cut into bite size pieces (skin removal optional). Add potato pieces to sour cream mixture a handful at a time and toss well.

Spread the potatoes in a large casserole dish; sprinkle the cheese, bacon and chives over the potato salad. Refrigerate until ready to serve.

Creamy Corn Bread

Ingredients

2 eggs

1 can of creamed corn

1 (8.5 ounces) box of corn bread mix

8 ounces sour cream

1/2 stick of butter, melted

1 cup shredded cheddar cheese

1/4 cup sliced jalapeño peppers (optional)

Heat oven to 450 degrees. In a large mixing bowl, add the eggs and whip until well-blended. Mix in creamed corn, sour cream, melted butter and corn bread mix. Stir well and pour into a greased 8-by-8-inch square pan. Sprinkle the top with cheddar cheese and jalapenos. Bake for 45 minutes or until top is golden brown. Allow to completely cool before cutting.

Garlic Parmesan Shrimp

Ingredients

1 pound of raw, peeled and deveined shrimp (18/20 count size)

1/4 cup olive oil

3 cloves of garlic, minced fine

1/2 cup grated Parmesan cheese

2 tablespoons fresh, chopped parsley

Heat oven to 350 degrees. Arrange the shrimp in a baking dish. Drizzle the olive oil over the shrimp, and sprinkle the chopped garlic evenly over shrimp. Sprinkle the Parmesan cheese and parsley over the garlic. Bake about 30 minutes or until shrimp are firm and opaque.
