One of my favorite combinations - banana ice cream with cocoa powder and peanut butter mix ins.

I love ice cream as much as a five-year-old kid, but I’m trying to be healthy so I needed a substitute for my addiction.

Enter banana ice cream.

My sister (click here for her blog full of tasty ideas) passed along this gem of a recipe and it has changed my life.

Prepare as I’m about to provide you with a really long list of ingredients you’ll need, so get out your notepad. Are you ready?

That’s it.

Okay, you might think I’m crazy but bear with me.

First, peel your bananas, cut them in half and place them in plastic Ziploc bags. Then throw the bananas in the freezer.

Note: I had to tell you to put the bananas in the bag first because when I told my mom about this, she tossed the whole banana in the freezer and was shocked later to find she couldn’t get the peel off.

Now you need to wait a few hours until your bananas freeze. I suggest reading a great book, dancing to some oldies music or taking a walk to prepare for the deliciousness that is about to hit your taste buds.

After a few hours, take the bananas out and cut them up. If you have a hard time, may I suggest a banana slicer. (Read the reviews for a good laugh.)

Toss the slices into the food processor and turn it on. You’re going to have to open the lid a few times to scrape the sides with a spatula to get it mixed evenly but it should only take a few minutes. Sometimes, I add a little bit of coconut milk or whatever milk product I have in my fridge to help it mix better.

Once all the chunks are blended and it’s a smooth ice cream like texture, grab a spoon and sit on your couch and enjoy.

If you’re feeling fancy, you can toast some coconut and top with honey or add in a few frozen berries for flavor. One of my favorite variations is to add some cocoa powder and peanut butter. Feel free to mix it up and try adding other ingredients you have around your kitchen – although, you might want to skip on the ketchup. I can’t imagine that would be too tasty.

Give this recipe a go for an easy, healthy ice cream alternative and it will have you singing, “That (ice cream) is bananas – b-a-n-a-n-a-s!”
