Flavors of the season
I found turkey tenderloins while food shopping and decided to try something new with the popular meat of the holiday season. By marinating and grilling them, I found this was the tastiest and juiciest piece of turkey I have ever had! The baked pears with vanilla ice cream were a perfect dessert to finish this tasty and healthy version of a turkey dinner.
Grilled Turkey Tenderloins with Cranberry Apple Glaze
Ingredients
2 turkey tenderloins
Marinade
1/2 cup olive oil 3 tablespoons white wine vinegar 1/4 cup spiced apple cider 2 cloves garlic, minced 2 teaspoons chopped rosemary leaves 1 teaspoon thyme leaves Salt and pepper
Glaze
1 cup canned cranberry sauce 1 cup apple jelly
Put ingredients for marinade in a one-gallon size zip-lock bag and mix well. Add turkey tenderloins to marinade bag and refrigerate four hours or overnight, turning occasionally.
In a small saucepan, add cranberry sauce and apple jelly. Over medium-low heat, stir and slowly melt mixture until completely melted and smooth. Turn off heat and set aside until ready to use.
Outdoor grill: Heat grill to medium heat. Remove tenderloins from marinade bag; discard bag and marinade.
Place turkey on grill and cook 7 to 9 minutes per side (internal temperature should read 170 degrees).
Take about 1/4 cup of the glaze out of the pan and brush onto both sides of the tenderloins when they are almost finished, turning once to cook another minute or two.
Alternate indoor method: Heat oven to 400 degrees. Use a generously oiled grill pan or skillet to sear tenderloins until golden brown on both sides. Remove tenderloins from pan and place on a meat rack; brush some of the glaze on both sides, place in oven and cook about 10 minutes or until internal temperature reaches 170 degrees.
Slice finished tenderloins and serve with remaining cranberry apple glaze and a garnish.
Baked Pears
Ingredients
3 Bosc pears 1/3 cup dark-brown sugar, packed 1/3 cup spiced apple cider 2 tablespoons butter 1/2 teaspoon ground cinnamon
Heat oven to 350 degrees. Peel pears and slice in half from top to bottom. Remove cores and inner stems, and place pears in a baking dish. Pour apple cider into a small saucepan and place over medium heat. Add brown sugar and stir until sugar is completely dissolved. Remove pan from heat and whisk in butter and cinnamon. Pour mixture over pears and place in oven. Bake 30 minutes, basting pears with the sauce a couple of times while baking. Serve hot with a scoop of vanilla ice cream.
